The poblano is a relatively mild chilli pepper originating in the State of Puebla, Mexico. Once dried, the poblano becomes known as an ancho chilli (ancho means 'wide' in Spanish). Large & heart-shaped with a deep-red to black complexion, ancho chillies have a conveniently thin skin, making them especially suitable for use in sauce making (simply soak for an hour in warm water & then blend). Ancho chillies are noted to have flavours of raisin, plum & coffee
